With some help from my dad, I finally figured out what was making text in IE7 (and, more annoyingly, in Outlook) go cuckoo on me: the Ironically named ClearType.

The bottom line, though, is that if you want you can go through the process for calibrating the monitors, or you can turn it off by going into the Internet Options -> Advanced -> and unticking the “use ClearType” option.
This is what I chose to do, because I’m running two monitors that apparently work on the two different schemes possible for monitors (RBG vs BGR) - so I will never get ClearType to look good on both monitors at once.
But I’m OK with that since normal text looks fine to me anyway.
